Chocolate Zucchini Overnight Oats in your cup!

For this recipe, I was inspired by The Spicy RD Nutrition's Zucchini Bread Oats and Christina Tennyson, MD's use of cacao in her overnight oats as well as the abundance of zucchini our garden has blessed us with!

If you like chocolate zucchini bread, you will really enjoy this recipe and the wholesome ingredients it has to offer.

1/3 cup oats (I used Bob's Red Mill)

.

1 TBSP chia seeds

.

1/2 cup plant based milk (I used Califa Farm’s Oat Milk)

.

1/4 cup shredded zucchini

.

1 tsp cacao powder (I used Navitas Organics)

.

1/2 TBSP pure maple syrup

.

seasonings to taste: cinnamon, nutmeg, ginger

.

1 TBSP crushed walnuts

.

1 TBSP nut butter (optional for extra protein)

.

Directions: Combine all ingredients in a mason jar and stir. Allow to refrigerate overnight before enjoying!
