Colorful Veggie Noodles with Pesto

Find yourself a friend who randomly surprises you with a vegetable spiralizer so you can make the most beautiful veggie noodles!

I used a combo of beets, yellow squash, and zucchini from my garden and fresh basil from a neighbor’s garden to make this easy Pesto Veggie Noodles recipe.

Zucchini and other squash plants are packed with antioxidants and phytonutrients which help rid the body of free radicals and excess inflammation. Beets also have many health benefits, but the most interesting to me is their powerful effect on the gallbladder. The gallbladder is responsible for emulsifying the fats needed to elevate mood and decrease stress as well as to maintain artery health and reduce inflammation. Basil, like most herbs, helps detox the body, supports digestion, is amazing for skin health, and fights depression due to its heavy antioxidant properties.

Ingredients:

.

1 small to medium-sized zucchini

.

1 large beet

.

1 small yellow squash

.

Pesto:

1.5 cups fresh basil

.

2 tablespoons walnuts

.

2 tablespoons pine nuts

.

1/4-1/2 cup extra virgin olive oil

.

1-2 cloves garlic

.

1/4 cup fresh grated Parmesan cheese (or nutritional yeast for a dairy-free option)

.

Spiral all veggies above using a hand spiralizer (you can also find these pre-spiraled from the grocery store). Boil spiraled veggies in about ½ to 1 inch of water for about 5 minutes until tender. Cover and simmer while you prep your pesto.

For pesto, throw all ingredients into a food processor and blend into a paste. Add a bit more olive oil for desired consistency.

Drain veggie noodles, place onto bowl or plate and top with a scoop of pesto. Stir and enjoy!
