Mixed Bean Tacos

“It’s ok to fall apart. Tacos fall apart and we still love them.”

I saw a post recently that said this and it made me smile. It also made me want tacos, so here is a recipe for mixed bean tacos. Happy Sunday Friends!

Sprouted Corn Tortillas (I used Food For Life)

1 BPA free can organic black beans

.

1 BPA free can organic garbanzo beans

.

1 cup vegetable broth

.

1 onion

.

3 cloves garlic (chopped)

.

1 Avocado

.

Seasonings: Paprika, Cumin, Black Pepper, Chili Powder to taste

.

Directions: Sauté chopped garlic and onion in a small amount of vegetable broth until browned. Drain and rinse beans and add to skillet with garlic and onion. Pour in remaining vegetable broth, add seasonings and let simmer until most of the broth is cooked out. Mash beans into a creamy, spreadable mixture.

Warm tortillas over stovetop or in oven until lightly crisp. Spread bean mixture and top with chopped avocado and fresh pico de gallo.
